Un estudi publicat a la revista The Lancet Planet Health<\/a> on hi ha participat l’Institut d’Investigaci\u00f3 Biom\u00e8dica de Bellvitge (IDIBELL) i l’Institut Catal\u00e0 d’Oncologia (ICO) estableix que el consum d’aliments processats incrementa el risc de patir algun c\u00e0ncer. El treball ha estat liderat per l’Ag\u00e8ncia Internacional de Recerca del C\u00e0ncer de l’Organitzaci\u00f3 Mundial de la Salut (OMS).<\/p>\n

Es tracta de l’estudi m\u00e9s ampli i complet que s’ha fet mai al respecte, en el qual s’han incl\u00f2s m\u00e9s de 450.000 persones de 9 pa\u00efsos europeus i s’han tingut en compte fins a 25 c\u00e0ncers. Les dades utilitzades s’han obtingut de la cohort de l’Estudi Europeu Prospectiu en C\u00e0ncer i Nutrici\u00f3 (EPIC, de les seves sigles en angl\u00e8s). Els resultats confirmen una associaci\u00f3 entre el consum d’aliments processats i ultraprocessats i risc de c\u00e0ncer. A m\u00e9s, aquest estudi proporciona proves s\u00f2lides que indiquen que substituir el 10% dels aliments processats o ultraprocessats que consumim per la mateixa quantitat d’aliments m\u00ednimament processats redueix entre el 4% i el 5% el risc de patir c\u00e0ncer.<\/p>\n

El Dr. Antonio Agudo, cap del grup de recerca en Nutrici\u00f3 i C\u00e0ncer de l’IDIBELL i l’Institut Catal\u00e0 d’Oncologia, autor de l’article afirma: “Amb les dades d\u2019incid\u00e8ncia actuals a Espanya, aix\u00f2 significaria evitar, anualment, entre 11.000 i 14.000 casos de c\u00e0ncer. El tumors que m\u00e9s es beneficiarien d\u2019aquest efecte protector serien els del tracte digestiu i el c\u00e0ncer de mama”.<\/p>\n

Els i les investigadores de l’estudi suggereixen que el consum d’aliments ultraprocessats podria incrementar el risc de c\u00e0ncer per la seva forta associaci\u00f3 amb l’obesitat, conegut factor de risc de c\u00e0ncer. A m\u00e9s, aquets productes tamb\u00e9 podrien incrementar el risc de c\u00e0ncer mitjan\u00e7ant l’exposici\u00f3 a contaminants, additius, i altres subst\u00e0ncies. Tot i aix\u00ed, encara no \u00e9s possible identificar les causes concretes responsables de l’efecte observat.<\/p>\n

Qu\u00e8 es considera un aliment processat o ultraprocessat<\/h3>\n

De mitjana, els aliments processats i ultraprocessats representaven el 27% de la ingesta di\u00e0ria dels participants en l’estudi, per\u00f2 aportaven m\u00e9s del 50% de les calories. Tots ells van proporcionar informaci\u00f3 detallada sobre el seu consum diari d’aliments i begudes, que va ser avaluat i classificat segons una escala est\u00e0ndard internacional.<\/p>\n

Aquesta escala considera com aliments processats productes relativament senzills elaborats amb l\u2019addici\u00f3 d\u2019ingredients culinaris. Exemples t\u00edpics d\u2019aliments processats s\u00f3n les verdures, fruites i els llegums enllaunats; fruits secs i llavors salats o ensucrats; peix en conserva, i begudes alcoh\u00f2liques produ\u00efdes per fermentaci\u00f3. Els aliments ultraprocessats s’elaboren a partir de formulacions d’ingredients industrials que no s’utilitzen en les preparacions culin\u00e0ries dom\u00e8stiques. En s\u00f3n exemples les carns processades com els embotits, els refrescos carbonatats i begudes energ\u00e8tiques, els pans i pastes envasades, o els plats preparats.<\/p>\n
