Following an unhealthy diet is one of the major risk factors for a wide range of chronic conditions, including cancer. Diet is subjective by many social and econòmic factors, and according to the World Health Organization and the Food and Agriculture Organization of the United Nation, food consumption patterns and trends in developed countries are shifting towards an unbalanced diet: the consumption of fruit, vegetables, whole grains and legumes is decreasing, while that of high-energy foods, fats, sugar and salt, meat, and processed meat is increasing.
Nutrients is an international peer-reviewed, open-access, scientific journal. Its impact factor is 4,171 (2018) and its objective is to publish studies related to Human Nutrition. In addition, Nutrients is member of the Committee on Publication Ethics (COPE), taking the responsibility to enforce a rigorous peer-review together with strict ethical policies and standards to ensure to add high quality scientific works to the field of scholarly publication.
